Ingredients
1¾cupflour
2tspbaking powder
¼tspsalt
¾cupwhite sugar
½cupunsalted butter, softened to room temperature
¼cupvegetable oil
3largeeggs
1tspvanilla extract
10-12tbspNutella, room temperature, as needed
Instructions
Preheat the oven to 400 degrees. Coat a muffin pan with cooking spray.
In a small bowl, stir together the flour, baking powder, and salt until well combined.
In a separate large bowl, beat the sugar, butter, oil, eggs, and vanilla with a hand mixer until creamy and smooth.
Add the flour mixture to the batter until just combined.
Spoon the batter evenly into the muffin pan. Side Note: This recipe only made 10 regular-sized muffins for me.
Spoon 1 tablespoon of Nutella over each cup of muffin batter, then swirl with a wooden skewer or chopstick.
Bake for 5 minutes. Reduce the heat to 350 degrees and continue to cook for 13-15 minutes, or until a tester inserted in the center comes out clean. Side Note: Starting at a higher temperature and then reducing it helps make the muffin dome.
Remove from the oven and cool in the pan for a few minutes, then move them to a wire cooling rack to finish cooling.
