Homemade Granola

My son and I spent a rainy afternoon making this easy homemade granola recipe from Kiss My Spatula. I used walnuts, almonds, coconut, and dried cranberries because that’s what we had on hand. This tasty granola was crunchy, slightly sweet, and a bit tart. My kids ate this for breakfast with milk, and as an afternoon snack with yogurt; both versions were a big hit.
Homemade Granola
Ingredients:
- 4 cups of oats
- ½ cup of slivered almonds
- ½ cup of walnuts, chopped
- 1 cup coconut, shredded
- 3 tbsp brown sugar
- ¾ tsp cinnamon
- ½ tsp fresh nutmeg, grated
- 1½ tsp salt
- ⅓ cup vegetable oil
- ⅓ cup honey
- ⅓ cup apple juice
- ½ tsp vanilla
- ¼ cup dried cranberries

How to Make Homemade Granola:
Preheat the oven to 350 degrees. Line a baking sheet with a silpat.
In a large bowl, stir together the oats, nuts, coconut, brown sugar, cinnamon, nutmeg, and salt.
In another bowl, whisk together the oil, honey, apple juice, and vanilla.
Pour the liquid mixture over the oat mixture and stir with a wooden spoon until evenly coated.
Spread granola evenly onto the baking sheet.
Bake, stirring every 10 minutes, for 30 minutes, or until golden brown.
Remove from the oven and let cool completely.
Add the cranberries and mix thoroughly.

Store cooled granola in an airtight container for up to 2 weeks. Enjoy.

Could you answer a question for me? This is the second time I've made granola and the flavor is great, but I follow the directions for baking and it ends up so dark, some bits tasting almost burnt. Should I turn down my oven or cook for less time?
Homemade granola is a staple in my house – I make a fresh batch every couple weeks and it is amazing – we put it on yogurt – frozen yogurt – cereal and nothing at all!!
